About the Pink Sauce Pasta

Pink Sauce Pasta is where tomato meets cream and neither one wins. It is rich without being heavy, which makes it the pasta that settles an argument at a table of four — the tomato camp and the cream camp both get most of what they wanted. The sauce is finished in the pan with the pasta rather than ladled over it, so it clings instead of pooling at the bottom of the bowl.
