Four vegetarian pizzas — Margherita, Corn & Capsicum, Farm Fresh and Paneer Tikka — plus chicken and chicken pesto. The dough is proofed daily and hand-stretched rather than rolled, which keeps the air that proofing built and gives a rim that lifts. Nothing is pre-baked and held.
The pasta
Pink Sauce, Alfredo, Pesto and a baked Mac & Cheese. Sauce is finished in the pan with the pasta rather than ladled over it, so the starch off the pasta thickens it and it clings instead of pooling.
Pink Sauce sits between tomato and cream and is the safest first order. Alfredo is the richest. Pesto is the fresh, herby one. Mac & Cheese is baked so the top browns.
What is genuinely Italian here, and what is not
This is café food inspired by Italian cooking, not a regional Italian kitchen. The pizza and pasta techniques are Italian; the Paneer Tikka Pizza and the spice levels are not, and we would rather say so than pretend otherwise. If you are looking for a full Italian restaurant experience, that is not what this is. If you want good pizza and pasta in Mira Road, it is.
