Why Pesto + Mozzarella Just Works
Pesto is aggressive. Basil, garlic, salt, nuts and oil, all of it forward. Mozzarella is almost the opposite: mild, milky, textural rather than flavourful. Put them together and each one fixes the other's problem.
The mechanics
Pesto on its own is too intense to eat much of — it is a seasoning pretending to be a sauce. Mozzarella dilutes it without muting it, because fat softens sharp aromatics rather than cancelling them. Meanwhile the pesto gives the mozzarella something to say. Neither works nearly as well alone.
Heat helps too. Warm pesto releases its basil and garlic aromatics into the melted cheese instead of sitting on top of it, which is why a grilled pesto sandwich smells like the whole thing rather than like two ingredients.
