About the Peri Peri Fries

Peri Peri Fries are the default order at The D's Cafe and the reason a lot of tables order a second plate. The heat builds rather than hitting, so the back half of the plate is spicier than the front. They are salted within the first seconds out of the fryer, while the surface is still able to hold seasoning — salt applied late slides off, which is why most fries taste of nothing followed by salt.
